Jalapeño Chive Egg Salad

Easy
Quick and filling lunch with the classic salt, fat, acid, heat combo. If you don't have chives, green onions also go well with the other ingredients.

Ingredients

  • 2 hardboiled eggs, peeled
  • 3/4 tbsp mayo
  • 1/2 tsp lemon juice
  • 1/2 tsp jalapeños, diced
  • 1 tsp chives, diced
  • 1/4 tsp paprika
  • Salt, to taste
  • Black pepper, to taste
  • Bread of your choice
  • Leafy greens of your choice

Directions

  1. Toast bread

  2. While bread is toasting, mash eggs together with mayo, lemon juice, jalapeños, chives, paprika, salt, and pepper.

  3. Add egg salad to bread and top with leafy greens (I like spinach)
